Pancakes (quick)

1 cup all-purpose flour
2 teaspoons sugar
½ teaspoon salt
½ teaspoon baking powder
¼ teaspoon baking soda

¾ cup buttermilk*
¼ cup milk
1 large egg, separated
2 Tablespoons unsalted butter

* if you don't have buttermilk, mix 2/3 cup regular milk with 1½ Tablespoons lemon juice and let the milk sit for 5 minutes to it curdle a bit

Prepare batter:

1. Melt butter
2. Mix dry ingredients in a large bowl
3. Mix buttermilk and milk in a 2 cup pyrex cup, and whisk in the egg white
4. Mix the egg yolk into the butter, then whisk the mixture into the milk mixture
5. Pour the wet into the dry, stirring the whole time. Batter will be lumpy at the end.

Make pancakes:

1. Heat pan to medium heat (6 on a 1-10 scale)
2. Melt butter in pan
3. Nominally quarter cup of batter per pancake. Flip when bubbles stop popping on the edges.
